Upside down cakes are very creative and eye pleasing deserts. You can use many fruits to make cakes in this style. In this style of making cakes many fruit slices are used at the bottom of the cake tin while making the cake but at the end of the recipe, it would be the top part of the cake and gives a marvelous look to the cake. You can use apples or bananas or oranges etc to make this cake. Today I make an orange cake in this style. It looks gorgeous. Many people boil the orange slices (with skin) for minutes and then use them in the cake. But I use the raw orange slices in this recipe without boiling it saved my time also. I directly used the orange slices without skin at the bottom of the tin mold. The raw slices of oranges caramelized naturally and gave a shiny color to the cake and make the cake gorgeous. For this recipe, of course, you have to take sweet oranges and use the slices seedless otherwise it would taste little bitter. Follow the instructions step by step and then you will have a nice and delicious Orange Upside Down Cake.

Method
  • Take 2 oranges and cut them in thick slices and keep aside. Make sure the slices are seedless and make juice with 1 orange left. Take sweetest oranges for this recipe.
  • Now take a mixing bowl to add orange juice (1/4 cup), cooking oil, milk and vanilla essence. Whisk until all combine together. Now mix the dry ingredients together. For that take a sieve now add first plain flour then powdered sugar, baking powder, baking soda and one pinch of salt finally. Do not skip the salt it enhances the flavor of the cake. Now sieve properly in a bowl then mix all together.
  • Now its time to mix the wet and dry ingredients together. So add the dry ingredients to the wet ingredients and mix and fold the mixture with the help of a spatula. After mixing take a whisker and whisk for 5-6 minutes continuously or whisk until smooth. When the batter became very smooth the batter would be ready. Keep aside.
  • Now set the oven. Take a deep bottom saucepan then spread salt over it. Now place a plate. Keep cover. Preheat for 10 minutes on medium flame. Preheating is very important it makes cake evenly cook.
  • Now time to set the cake tin. I take a round shape cake mold. You can choose as you want. Brush oil the cake mold. Now cut a parchment paper (round shape) and place to it. Then sprinkle some icing sugar all over it. The icing sugar gives a natural color to the orange slices by caramelizing. Now place the thick orange slices one by one nicely to the bottom of the cake tin. Please be careful with the slices because it would be the top part after making the cake. So it should be decorated nicely. Pour the batter over the orange slices and tap for few times to remove the air bubbles. Now place it to the preheated saucepan and bake for 50 minutes with the lid on at lowest flame.
  • After 60 minutes check with a stick by pushing it into the cake if it comes out clean then the cake is ready or not then bake more 5-10 minutes and then it will be ready. After baking cake cool completely and then demould the cake. Your spongy, soft & moist cake is ready to enjoy with your family.
  • Decorate with orange or mint leaves and orange zest.
