Paneer Tikka Roll is a very popular food in India. It is spicy, tangy & mouth watering. I try often paneer tikka roll at my nearby street shop. But today I make at home in my own style. In making tikkas I used very few spices but the very nice flavor in taste. I choose home available veggies like tomato, capsicums, etc. In many tikka recipes, I saw many use different color capsicums but I use only green one which is my favorite. I make this dish on grill pan but if you do not have any grill pan please use any tawa. But it should be well heated. This is the simplest paneer tikka roll ever. Equipments

Method

  • Before start cooking, you have to arrange two things. One is to soak the skewers in water and another thing is to take a small mixing bowl to add onion slices and lemon juice. Mix well and keep aside. Lemon juice helps to reduce the sharpness of raw onion flavor but gives a very tangy flavor to it. Soaking skewers are very necessary because it prevents from burning when making tikkas. 
  • Now take a large mixing bowl to add plain flour, one teaspoon of salt, sugar and clarified butter. Mix well. It should be formed like bread crumbs. When it is done add little by little water to it and make a dough. The dough should be soft because we are going to make a paratha then like Lachha paratha style. When the dough is combined well cover and keep it for almost one hour. It is necessary to give the dough a perfect relaxation. So when we roll the paratha it would not spring back.
  • Now take a frying pan. Heat well. Add gram flour to it. Fry for 5-6 minutes or the until the raw smell of gram flour is gone. The flame should be on medium low. When gram flour is fried well keep it in a mixing bowl. Now add one by one the spices to it- black pepper powder, cumin powder, red chili powder, salt to taste, mustard oil and yogurt. Mix all and make a smooth paste. Add yogurt at last because adding last it would be useful to make a perfect thick paste. if it gets much liquidity it would not make tikkas perfect.
  • Now add all the veggies like tomato cubes, green capsicum cubes, onion petals and along with paneer cubes to the thick paste. Mix with your hands. All things should be coated well with masalas. Marinate for at least 20 minutes.

  • After marination, take the skewers and put all marinated ingredients one by one in skewers in your likable patterns. I put at first onion petal then a tomato cube and then a paneer cube and a capsicum cube followed by and then repeat the same. Make all skewers get ready to grill.
  • Now heat a grill pan well. Add some butter on it or I say brush some butter and place 3-4 skewers one by one. Fry for 8-10 minutes on medium high flame. Turn and fry each side with taking breaks. When they are grilled well keep aside.
  • Meanwhile, take the dough and make small balls. With one cup plain flour, I made 3 medium large size ball. Now roll the ball with greasing oil. After rolling now spread some oil on it (use your hand) and then spread some plain flour with the help of a sieve on it. So the flour is spread evenly. Now make a cut from the center to edge with a knife then start to fold the cut side and take around with that, like making layers. now press with your palm and make a ball shape ones again and spread more oil and roll again. Now fry the paratha on a frying pan. Use 2 tables spoon oil to fry it. The flame should be on high flame. (If you do not want to paratha in lachha paratha's style then make a plain paratha).

  • Now the most favorite part of this recipe is making rolls. For that, place a paratha, add 1-2 table spoon of green chutney then spread some onion slices then add a skewer's tikkas (with the help of a fork) to it. Sprinkle some rock salt over it roll and wrap in paper and enjoy the special homemade paneer tikka roll.
  • Garnish with some more green chutney.

Cooking Tips
  • Arrange all ingredients handy before start cooking. 
  • Do not burn the tikkas so please careful when grilling.
