Here comes Diwali. We all make different types of sweets and snacks in Diwali. Today I made this sweet with just a few ingredients at home. There are plenty of popular sooji/semolina recipes like sooji halwa, sooji ke laddu or many more but this is a new recipe of sooji that is sooji peda. It is very tasty and soft. You can serve this sweet to your guest and family in this Diwali. This recipe is very quick to make so no need to extra time to waste. You make this sweet quickly and enjoy your Diwali with your family and friends. I use Kesar/saffron to bring a beautiful flavor in this sweet. If you do not want to use kesar you can use only cardamom powder also. I make this sweet in a steam maker for which I used a momo maker because it is very useful to make but you can use any of your steam maker.

1 cup
2)Milk
1&1/2 cup
3)Milk Powder

5)Saffron/Kesar
2 pinch
6)Warm Milk
3 table spoon
7)Clarified Butter
4 table spoon
8)Chopped Pistachio

Method
  •  At first, soaked the two pinch of saffron/Kesar to the warm milk. Leave it for at least 15 minutes.
  • Measurements are very important in this recipe. Please do take the same measurements as stated in the ingredients box.  Now take a frying pan heat well. Then add the semolina/sooji to the pan and dry roast the sooji until the raw smell is gone. It will take about 5-6 minutes. No need to till brown the sooji. The flame should be on medium low when dry roasting.
  • When the sooji is dry roasted well add the milk to it and keep stirring. Because sooji quickly absorbs the milk so be careful with that. Make sure you mix sooji and milk well. When it is mixed well turn the flame off and cover the frying pan and leave for it about 3-4 minutes to fill up.
  • Now place the cooked sooji in a mixing bowl. Keep the mixture for 2-3 minutes to cool down. But remember do not let it cool completely. After 2-3 minutes apply some Ghee/clarified butter on your palm and then start kneading. It has to be warm when start kneading. Make a soft dough.
  • Now add little by little icing sugar to it and knead. After adding icing sugar it would be very watery because sugar reduces its water but do not worry keep kneading and it will become in its shape again. Knead for 6-7 minutes.
  • After then add milk powder and cardamom powder to it and knead for more 2-3 minutes. Then rest it for 2 minutes.
  • Now grease your hands again and start making small balls from it. After making balls make a hole at the center using your finger. Now do the same with all balls. Then it is ready to go for steaming.
  • Grease your steam maker with more ghee/clarified butter using your hands or brush. Then add all the ball one by one on it. When water becomes boiling place this balls and steam for 3-4 minutes. Keep covering.
  • After steaming cool them down and fill the holes with chopped pistachio to give a nice look to the sweet.

Cooking Tips
  • When adding icing sugar to the dough the should be completely cooled down.
  • Before placing the balls on steamer boil the water first.
