Crispy Cauliflower | South Indian Snack | No food color  

Gobi  65 is a very popular snack from South  India. Basically, it has a subtle and tangy flavor. I made this recipe followed by chicken 65 just change a little bit in my own style. The crisp is very crispy outside but soft cauliflower florets inside. Combination of thin deep fried cauliflower florets and some spicy masala make this recipe a perfect starter. It could be served with some coriander chutney or with some tea for tea lovers. In south India, it is served with other South Indian food as a starter.

Equipments
  • Saucepan or any Frying pan
  • Mixing Bowl

Method
  • At first cut the cauliflower in thin and long pieces. Now take a large bowl with hot water and add the cauli flower florets to it and leave for 10 minutes. So it became soft and almost fifty percent cooked.
  • Meanwhile, take another mixing bowl and make a mixture for marinating. Add plain flour, corn flour, rice flour, red chili powder, turmeric powder and salt (to taste) to the bowl and mix well. The measurement of these ingredients play a very important role to make the snack perfectly crispy so take that exact measurement as given above.
  • Now add 2 table spoon of cooking oil to it and mix well. Then take 1 cup of normal water and add it little by little to the mixture and whisk with the hand beater continuously to make a thick and smooth batter. Keep aside for a little.
  • Now remove the cauliflower from the water and spread them in a kitchen towel. Leave for a few minutes to soak the excess water. Cauliflower pieces should be almost dried. Now take a mixing bowl to add the cauliflower and 2 table spoon of cornflower. Mix them well. It is a very important step to do because the cornflower soaked all extra moisture from the cauliflower. Now add black pepper and pinch of salt to it and mix them well.
  • Now add this cauliflower to the previously made batter and mix them using hands. Be careful while mixing. Avoid breaking the cauliflowers. Now, marinate it for 15 minutes.
  • We fry the cauliflowers in double time. That is one time in a low flame and second time in high flame. So it would crispy outside and soft inside well.
  • Heat 2 cup refined oil in a deep bottom frying pan. The flame should be on medium. Now add the dried red chilies and fry them for 20 seconds and take them out. Then add the curry leaves to the oil and fry them for 10 seconds and keep aside for a little.
  • Now add the marinated cauliflower to the oil one by one and fry them on a medium to low flame for 7-8 minutes. Fry them in batches. When it became light golden brown take them out and fry all the batches similarly. When all batches are done now time to fry them the second time. Heat the oil in the high flame then add all the fried cauliflower together and fry them for 1-2 minutes or until golden brown. Now keep them in mixing bowl.
  • Now crush the fried dried red chili powder using hands then add it to the fried cauliflower. It adds the very subtle but tangy flavor to the crisp. Sprinkle rock salt and chat masala to it and mix properly.
  • Serve with some coriander chutney



Important Cooking Tips
  • The shape of cauliflower should be thin to make it perfectly crisp.
  • Adjust heat before frying cauliflower both time.
