Momo is a type of Dumpling which is a simple steamed with some stuffed veggies or some meat. It is a Tibetan food, they take this meal as their main course. It is popular as a street food also. Today I make this recipe with minced chicken and with some veggies also. In this recipe, I give two recipes of momo that is Steamed Chicken Momo and Fried Chicken Momo. Fried momos are also very popular as street food. But the momos are best when you make at home and serve with some Soup and Chutney. Momos should be super soft outside and fresh and juicy inside and it is very easy to make.

Method
  • At first, make the dough. Take a mixing bowl then add plain flour, baking powder, and salt. Mix well these dry ingredients. Now add little by little water to it and make a soft dough. Keep kneading until it combined together but do not over knead. After making the dough keep covering with a wet kitchen towel for at least 1 hour.
  • Now its time for marinating the chicken. For this at first, make the chicken keema. Use a very sharp and large knife or you can make this in a blender to make the keema and then chop the onion finely. Now take another mixing bowl now add the ingredients one by one- chicken keema, chopped onion, chopped garlic, chopped ginger, chopped spring onion, chopped coriander, soya sauce and salt to taste(I add ½ spoon). Now mix all this together and marinate for 20 minutes. After marinating the chicken heat 3 table spoon of cooking oil well and add this to the marinated chicken and then mix quickly. Now the filling is ready.
  • Now, this is the best part of this cooking to make the momos. Divide the dough in small balls and keep covering them with the wet kitchen towel while making momos. Roll a small ball in a flat disk with the help of a rolling pin, use some flour while making the disks. Now take a spoon of the marinated chicken and place it at the center of the disk. Seal the part with any design of momo I seal in the basic style for the steamed chicken momo that is – start with one side by pinching and then twisting keep continue this same until it reached the half of the disk then seal by pressing other plain side with the twisted side together. Now for the fried momo the style you can make- start with one side by pinching and then twisting keep continue this same until it reached the other side and finally seal the two side together at the center(as shown in the picture). Doing so the momo cannot break while making frying them. Two design for two types of momo. Now make all the momo.
  • Now boil the water in the bottom part of the momo maker. When it reached boiling point place the other part of momo maker over it and sprinkle some plain flour and add the momos you make one by one. Keep a little gap between them and keep cover. Steam for 7-8 minutes. Now we have steamed momos ready.

  • Its time to fry them. Heat oil in high flame. You can fry momo directly in oil but I fried steamed momo today. It is much tastier than the frying momo directly. Now add some steamed momo(save some steamed momo to enjoy) to the oil fry for 2-3 minute or until golden brown them keep them in an oil absorbing paper for some time and both steamed and frying momo are ready to serve.

  • Serve with some chili and tomato chutney and hot vegetable soup. You can sprinkle also some coriander leaves ver it.


Important Cooking Tips
Keep covering the dough while making momos otherwise it will be dried soon.
Careful while making frying momo, the steamed momo should be dried well when fry in oil.
