Indian Veg Curry | With Fresh Green Peas | Seasonal Food

You can find many kofta recipes in India such as Malai Kofta, Lauki Kofta, Aloo Kofta, etc. Matar Kofta is a seasonal dish because in this recipe I use fresh matar or green peas which make the meal delicious and fresh but you can also use frozen green peas but the result will not be the same. I prefer fresh green peas. Fresh tomatoes are also used in this recipe as a good base of the gravy though you can use also ready made tomato puree and I add some Indian spices to make the curry perfect. It is a quick recipe with simple steps so you can make it without wasting extra time.

EQUIPMENTS
  • Saucepan/Kadai
  • Long Frying Spatula
  • Knife
  • Oven

METHOD

  • At first, let's make the koftas. For this, boil the fresh green peas for 3 minutes and strain immediately then keep them in cold water to prevent overcooking. Now blend all boiled peas without adding any extra water. The paste should be tight enough.
  • Now take a mixing bowl and the boiled peas paste, 1 tsp of cumin powder, 1 tsp of coriander powder, 1 tsp of red chili powder, 1 tsp of salt, gram flour and boiled potato one by one. Mix all ingredients together. Use your hand for mixing this you have to bind all together well.
  • Now take a small portion of the mixture and give it the shape of flat round. Make sure it has not any cracks. Make all koftas one by one. Now add the cooking oil to a dip bottom saucepan or kadai, heat well. Now add the koftas to the pan. Fry for 5-6 minutes on medium flame. Fry the koftas in 2or 3 batches. After frying all koftas keep aside and now lets move to the gravy/curry.
  • For the curry, you have to prepare all the veggies at first. Chop the tomatoes roughly and get all other veggies handy. Now in the same pan and oil in which we fry the koftas add cumin seeds, dried red chilies and bay leaves one by one. Fry them for 10 seconds. Now add the chopped onions, fry for 2 minutes. Then add the ginger and garlic paste ( you can also use chopped ginger-garlic) and fry them for more 2 minutes.
  • Now add the chopped tomatoes to it. Mix well and cover with a lid and cook for 10 minutes on medium flame. Meanwhile, make a spice paste. For this in a small bowl add 1 tsp of cumin powder, 1 tsp of coriander powder, 1 tsp of turmeric powder, 1 tsp of red chili powder and 1 tsp of salt. Now add little water to it and make a smooth paste.
  • After 10 minutes all veggies should be soft now. Then add the spice paste to it and mix well. Cook them for more 2 minutes. Now add 1 cup of water, bring to the boil. Add sugar and garam masala to it and mix well. Now add all the fried koftas to it one by one. Cover with a lid and cook for 2 minutes on medium flame. Then open the lid and flip all kofta one by one using a spoon and again lid on and cook more 2 minutes on medium flame.
  • Now spread dried kasoori methi leaves over it and turn off the gas. Matar Kofta is ready to serve with paratha or nuns or roti or even rice.

IMPORTANT COOKING TIPS

  • While blending the boiled peas do not add extra water to blend. The paste should be tight enough to bind koftas.
  • Fry the koftas in batches and do not stir too much otherwise the koftas will break.
  • After adding the fried kofta to the curry do not cover too long, just cook more 2 minutes the koftas will soak the gravy quickly.
