EQUIPMENTS

METHOD
  • At first, take light and flat shape poha or flattened rice. It is important to take this shape. It makes the snack crunchy/ kukuri. You have to arrange all the ingredients together before start cooking because the recipe is very quick. If you do not keep ingredients handy poha will burn while frying.
  • Now add the cooking oil to the frying pan and heat well. The oil should be medium temperature otherwise all ingredients will burn quickly. After heat well oil adds the peanuts or badam to it. Keep continuing stirring and fry for 30 seconds or till golden brown. After that keep aside the fried peanuts.
  • Now break 2 medium size papad in small pieces and then fry them also on high flame. After frying all papad pieces keep them aside too. We add peanuts/ badam and the papad at the end of the recipe.
  • Add the curry leaves to the same oil make sure the flame should on medium this time. It will take just 10-15 seconds to fry the curry leaves. Then quickly remove the leaves from the pan and keep aside for later use.
  • Now add the dried red chili to the pan and fry for 10 seconds or till turns black. After that add the cumin seeds and fry for more 10 seconds and then add the asafoetida/ hing to it. Now add the poha/ flattened rice to it. The flame should be on medium. You have to stir continuously the poha otherwise it will burn so be careful. It will take 3-4 minutes to fry perfectly the poha so you have to be patient.

  • After frying well the poha along with the cumin seeds, dried red chili and asafoetida turn off the gas and keep them in mixing bowl. Now its time to mix all ingredients together.
  • For this now smash the curry leaves using your hand. Do not skip curry leaves from this recipe because it adds the extra spicy flavor to this snack. Now add this smashed curry leaves, fried peanuts/badam and fried papad with the fried poha. Now take the fried red chili and break roughly using you hand though it is optional. If you do not want to make this too spicy so skip the step. The flavor of the dried red chili is enough for this snack.
  • Then add all the spices- red chili powder, chat masala, black pepper, rock salt, citric acid, and salt. Give it a good mix using a spatula or spoon. Your Spicy Poha mix is ready to go with your masala wali chai. Enjoy your time with this.

IMPORTANT COOKING TIPS
  • You have to arrange all these ingredients before start cooking because if you start cooking once you would not have any time to arrange these items. The recipe is very quick.
  • After frying the pohas very well remove quickly in a bowl to prevent over frying which will make the poha burnt.
  • If you do not want to make the snack too spicy so you skip the red chili powder or use less amount of the powder. Otherwise, it will be too spicy for children.
