Winter is here. In this season there is plenty of vegetables available in the market. I call 'Winter'- a season of vegetables. Carrot is a very healthy and fresh vegetable. It is a root vegetable. It is very good for health we all know. Today I use carrot in this recipe as a main ingredient. I use very few ingredients to make this soup simple and light. This soup is very healthy and delicious and best for kids and for those who want to lose their weight. I did not use any cream or butter to make it light. To give a basic and subtle flavor I use some mint leaves and black pepper. Black pepper adds a little spiciness to the soup which also very good for health and mint leaves add a subtle flavor to the soup. Carrot soup has been described as a classic dish in French Cuisine. Though it is very popular through all over the world now. It is served hot of course with some toasted bread or noodles or dumplings as a side dish.

3.Spring Onion
2 stick

5.Garlic
4-5 cloves

9.Salt
1 tea spoon or to taste
10.Cooking Oil
2 table spoon

  • Saucepan or Frying Pan
  • Long Frying Spatula
  • Blender
  • Knife

Method
  • At first chop the vegetables. Cut the carrot in square shape. Chop the onion roughly. You can chop it in dices. Now chop the spring onion stick thick or roughly. Chop the garlic and ginger also roughly. There is no need to chop them perfectly so no requirements of chopping skills. Make sure all vegetables are cut well before start cooking. And also keep handy the fresh mint leaves.

  • Now add cooking oil to a dip bottom saucepan or you can use a well wide frying pan. Heat well. Please do not use oil too much otherwise it will float at the end of the cooking on the surface of the soup which is not good to look great and to consume. Now add the chopped ginger and garlic to the oil. Fry them for 1-2 minutes on medium flame otherwise, they get burnt quickly. Fry ginger and garlic until light golden brown.
  • Then add the chopped onion and spring onion. Fry them for 3-4 minutes. Then add turmeric powder and salt to taste. Mix well. Do not fry them too much just wait until soft. We do not need the burnt onions so you keep the flame medium low.

  • Now add 4 cup normal water and mint leaves to it. Stir well. Then cover the saucepan and cook for almost 30 minutes. Keep the flame on medium. The vegetables should be soft enough to make them blend well. So have patience and wait for 30 minutes.
  • After 30 minutes check the vegetables with a spoon if they are soft enough. Now take the vegetables out of the vegetable stock in a bowl for this use a spatula with loops. Cool completely the cooked vegetables and then blend them all along with cooked mint leaves of course. Mint leaves give a nice and subtle flavor to the soup which is the best part of this soup. So do use the mint leaves. Make a smooth and nice paste of these vegetables.
  • Now, add this paste again to the vegetable stock. Mix quickly and well with a spatula. Then heat this mixture again for a few minutes or until you get the perfect consistency of your soup. Last of all add the black pepper to the soup. Mix properly. I did not use butter but if you want to use butter add now a little piece of it and mix it.
  • Serve with some toasted bread or noodles or dumplings as a side dish and do not forget to keep a nice part of a mint leaf over the soup.


Important Cooking Tips
  • Make sure the cooked vegetables get cooled completely before blending otherwise, it would be splashed out.
  • Please use mint leaves to make this recipe perfect. The combination of carrot and mint is just meant to be together.
